Standard Description
Leeks are to be processed in the field as follows:
- Roots are cut cleanly at harvest.
- Outer leaves and stem surfaces are cleaned to remove soil.
- Leeks are bunched in the field immediately after cleaning.
Reason: Performing this work in the field reduces the need for washing and
minimises refuse disposal in the wash shed.

Measurement Method
Inspect harvested leek batches. Confirm:
- Roots are trimmed.
- Stems are cleaned.
- Leeks arrive at the wash shed already bunched.
- Minimal refuse is generated in the wash shed.

15cm bunches -
Applies To
- All staff involved in leek harvesting and processing.
- All leek harvests, regardless of quantity or weather.

Review and Maintenance
Review annually or sooner if processing inconsistencies appear or wash shed
refuse increases.
