Leek Processing Standard

Define the required method for processing leeks in the field to minimise wash shed workload, reduce refuse volume, and maintain consistent presentation.

Steps

  1. Standard Description

    Leeks are to be processed in the field as follows:

    • Roots are cut cleanly at harvest.
    • Outer leaves and stem surfaces are cleaned to remove soil.
    • Leeks are bunched in the field immediately after cleaning.

    Reason: Performing this work in the field reduces the need for washing and

    minimises refuse disposal in the wash shed.

  2. Measurement Method

    Inspect harvested leek batches. Confirm:

    • Roots are trimmed.
    • Stems are cleaned.
    • Leeks arrive at the wash shed already bunched.
    • Minimal refuse is generated in the wash shed.
  3. Bunching standard for sale
    15cm bunches
    15cm bunches
  4. Applies To
    • All staff involved in leek harvesting and processing.
    • All leek harvests, regardless of quantity or weather.
  5. Review and Maintenance

    Review annually or sooner if processing inconsistencies appear or wash shed

    refuse increases.
